On occasion I bake bread and pastries for special events in Jackson Hole.

So while you may think your vastly uninspired putdown hurt me the fact is that I make sandwiches whose menu price typically tops $100.

It is a prideful sin yet all the same I am proud of this.

@MeganC   To pay $100 for just a sandwich is ridiculous unless it's rather large in size and loaded with goodness and comes with several sides and the atmosphere must match the price of course. We went to Jackson a few years ago.  It is crazy expensive, there, but I sure didn't pay $100 for a sandwich.  I think it was something  $30-35 for a Chicken Fried Steak, which  at least where I live is damned expensive.

My signature sandwich starts with a Wagyu prime rib. It is cooked sous vide to 155F and then seared with a cooking torch. It is then deep frozen so the meat can be shaved into delicately thin slices. The resulting slices are readily warmed to 38F for serving.

The bun is a fresh ciabatta that is cooked until done, but not crusty. I was taught to make this style ciabatta from a friend of mine who baked for Clint Eastwood's Hog's Breath in Carmel.

The roll is sliced and seared in butter.

4oz of the prepared beef is placed on the roll.

This is topped with two teaspoons of my saffron aioli.

Last time I made these they were about $100 each. Probably $120 to $150 if I were to make them now.

Sounds impressive.  But your audience here , are probably  much like me, and  are meat 'n taters kind of folks.

We have a pizzeria called "Mellow Mushroom" -- their pizza's cost close to that depending on what type of pizza you get and size.  The pizza is worth it though and we splurge on it every once in awhile (we usually get more than one).

Naww...  we got food snobs down here too, who will mosey over to Houston and  make it a point to disclose how many Michelin Stars their last meal  got.  Some of those are good friends. 

I am a cheapskate.  Is there a Steak Dinner over in Houston for a $100 to die for?  I am sure there is, but I am a purveyor of the laws of diminishing returns.  Is that steak that costs $100, $70 better than what I get here locally for $30?.  No, not at least in my eyes

To be fair, Waygu beef would likely be wasted on me. You and me would probably agree than premium meat (of any variety) comes from passin through the smoke. And being an hunter, I am well accustomed to the very best cuts of a critter - The inner backstraps are in the smoke right at camp, and never make it to the freezer, for sure...

I went with a gal for a while that was a world class baker, and certainly could be called a chef. A hilljilly, so she knew about smoke too. Her sammiches were a gift. Truly.

I doubt I have ever paid a hundred bucks for a sammich, or that I ever will.
But if Mamma's got the credz for it, then PROPS... I ain't gonna throw her out of bed for eating crackers.

Me too! It's a bunch of snobs and rich people who eat amazing food just to show off. It's also a  9999hair out0000 to get there from Cody during the summer. It can take four to five hours crossing the parks at 10-20mph.

The real thing is drifting a corner going from asphalt to gravel with a couple sheriff deputies in the rear view mirror...

I did a Bandit car, back in the day... refitted with my signature 428 Interceptor and a Muncie M22 Rockcrusher mated to a drop gear overdrive.

The guy wound up hard paying, so I got a mechanic's lien... HOW I Wanted that car! I've made a few real masterpieces in my life - And that car was one of em. He wound up coming up with the scratch with two days left - Which wounded me.

As it turns out, I have only ever owned ONE Screamin Chicken in my whole life. I wrapped that one around a phone pole... But it ruined me for any other... Love my Chevelles, and I always will.
But the Firebird is the one that got away.

Mine was a 71 I think... The first year TA, but they didn't call it a TA yet... Like the GTO was actually named a Gran Turismo etc... The Trans Am had a similar weirdo name then. That's the one I wrapped around the phone pole.

My hallmark Chevelle was a '65 El Camino. That was my Whiskey Runner... The one I got in most of my trouble with. Always wanted a 65 Chevelle coupe to go with it. Never stuck. Had a couple, but they were worth too much so they went down the river.

Had a 69 Malibu and a 69 Camino... Turned a ton of em, but those were my drivers... Outside of the '65, that Chevelle blue '69 Camino was the other keeper, and I wish I could get me another someday.

But I took a hard turn into 4WD and started jacking up pickups and getting stuck in mud holes... Seemed to be a cheaper hobby at the time, rather than all the tickets and insurance woes and jail time I wound up with running around in a fast one.  :shrug:

To be fair, Waygu beef would likely be wasted on me.

The thing about Wagyu is the thinner the slice the more intense the flavor experience. It's overwhelming as a steak. Sliced transparently thin it dissolves in your mouth and this sensation of beef flavor fills your senses. Thin slices piled into a neutral flavored roll with the saffron infused aioli is very powerful. It is simple without any further embellishment like arugula or etc.

You owe it to yourself to experience it someday!  :yowsa:

I will happily give it a whirl... But not at the standard price... Some of that is just faddy nonsense. Like Gueyducks as an instance... Try buying that in the store sometime... Crazy prices that I will never do.
Now, if  y'all want to go on over to the Columbia River and dig em, I will be HAPPY to do that... What a fine time. And you will never get a better gueyduck than the one you get there.

Chaga tea is another... I see that for 90 bucks an ounce and laugh. I can get chaga by the bucket. For free.

As for Waygu, I think it is more a style of raising than it is anything particular to the breed... I can raise up and finish off an Angus about the same way to get super tender heavily marblized meat... Now, that ain't how we do - I don't want my meat pen or paddock raised. Heck, I would rather grass fed with no grain finish... That's all red with very little fat marbling. I like that taste and texture better - Relying on the smoke to make it soft.

That's why I said it would be wasted on me... My palate is made for hearty fare... There has been occasion where a woman has convinced me to go off and sample dainty fare - And that is a good thing. I had a great time most of those times, enjoying the fare and the company.

But I have and always will revert to my hillbilly roots. You can dress me up and put a fancy drink in my hand, and I will like it fine... But tomorrow night I will be stumbling in in my Carharts looking for a PBR in the fridge  happy77
