A few months back, HEB stores around here started carrying Sharp American cheese, which I thought was a very interesting flavor. Unfortunately, it was apparently just a test marketing, and they don't have it any more.

Take some Mexican cheese fold it inside of a corn tortilla and cook it on both sides for a few minutes.You won't need to add anything else.
We have a new Mexican Mercado a few blocks away and they have a cheese section to die for. (and a great butcher too).
I particularly enjoy Manchego at the moment.

Great stuff. Goes well with apples. You just can't top really sharp Tillamook Cheddar though.

That stuff is great on crackers, chili dogs, decorating cakes. If it wasn't for my wife, my daughter and I would brush our teeth with Easy Cheese. She's no fun.
