Definitely KC steaks can't be beat.
Well darlin, there ain't a dang thing wrong with a chunk of good ol Montana Angus, I'll tell you what... Grass fed its whole life on a high mountain meadow...
As for ribs, we have a guy in the inner city that starts his grill/smoker first thing in the morning ... he feeds those in his neighborhood. He doesn't have a restaurant front and I've never had the nerve to stop and ask him if I could try some. Best bq I've had was at an old (slanted floors and tables) restaurant shack in Memphis. Fall of the bone, melt in your mouth, honest to goodness all day b'que.
So I was down in Olathe KS working construction, see... But we got laid off for a mite, so I picked up some dock work to meet the middle. So one of those guys on the dock was a big ol black redneck boy... I waited till we were fair acquainted, and asked him where was the best rib joint in town...
He took me into KC, to the most disreputable rib joint I have ever been in - same thing - Wonky tilted floors, so much smoke and grease on the walls that you couldn't tell the color anymore. Blues playing in the background...
It was a bit uncomfortable to start with, I'll admit, me being the only white guy for a mile around, and in sh*tkickers and a bailey hat to boot, but man oh man! That was the best ribs I have ever had... And good folks too, btw. I don't think I would have survived to even get close to that place, had he not brought me there... and they sure looked at me sideways with a stink eye to start with... But everybody loosened up and we had a high ol time.
One of my favorite people, and one of my best times away from this valley. And I am in awe of that food.
