What’s the best thing about bugs? There are just so many of them! Now, not everyone is going to agree, but once your door to entomophagy finally opens, the choice is simply mind-blowing — it would be nearly impossible to sample the full variety of flavours on offer in just one lifetime. There are ants that taste of citrus, nutty crickets, arachnids akin to soft-shell crab, and even grubs that resemble bacon!
Chefs like David George Gordon, Daniel Creedon and Peter Gorton have been exploring these flavours for years, but are still really just scratching the surface.The map below shows the countries where the most insects are eaten — you’ll notice Europe and North America are pretty weak by comparison.
