My Florida-native wife is a bonafide key lime pie snob. A real key lime pie requires hours to make with LOTS of stirring. 99.9% of the known world avoids all that by using condensed milk.
My wife has tried at least 5 recipes that claim to be authentic, and she just told me she didn't see any that didn't require condensed milk. The best one she did, required squeezing 10 pounds of key limes,instead of concentrate. Seeds and all Said she wasn't going to do that again., My local bakery does the best. And at $20, I was guessing it wasn't easy or cheap.
Don't think they'll give me the reciepe either.
