2lbs fresh ginger root

Got two pounds of fresh ginger root. It is so fresh it is budding with leaves. Trying to decide what to do with it? There are a million and one possible options. I am suffering from what is called "a paralysis of choice". Any suggestions will be welcome. Guess I will plant at least some of it ...

Tea.  It's very beneficial to drink if you have a cold or feel like you're coming down with a cold.  It also helps with inflammation.

Chicken Ginger Soup

Ingredients
------------
3 tablespoons olive oil
15 cloves of garlic, minced
2½ yellow onions, diced
5 large carrots, thinly sliced
5 celery stalks, roughly chopped
3 tablespoon fresh grated ginger
3 tablespoon fresh grated turmeric (or 1 tbs ground turmeric)*
15 cups low sodium chicken broth
2½ lbs boneless skinless chicken breast or thighs
1 tbs freshly chopped rosemary
1 tbs freshly chopped thyme, stems removed
1½ tsp salt
1 tsp black pepper
2½ cups pearl couscous
2 cups frozen peas


Instructions
Place a large dutch oven or pot over medium high heat and add in oil. Once oil is hot, add in garlic, onion, carrots and celery; cook for a few minutes until onion becomes translucent.

Next add in grated ginger and grated turmeric. Saute for a minute to let the spices cook a bit, then add in chicken broth, chicken breast, rosemary, thyme, salt and pepper.

Bring soup to a boil, then stir in couscous. You’ll want the chicken to be covered by the broth so make sure you stir them down to the bottom.

Reduce heat to medium low and simmer uncovered for 20-25 minutes or until chicken is fully cooked.

Once chicken is cooked, remove with a slotted spoon and transfer to a cutting board to shred with two forks. Add chicken back to pot then stir in frozen peas. If you find that you don't have enough broth, feel free to add in another cup. Everyone likes their soup differently. Taste and adjust seasonings, if necessary. Enjoy.

It says that fresh ginger works in the freezer, which is a relief.
Can freeze some of it and think about it slowly. Do not have to decide right now.

With some of it planted (done), and some of it in the freezer (done), I can take all the time I want.

Will do this first with a half pound of it. The boiling ginger water will be saved and used for tea, once it has done its job.

Candied Ginger

  • Spray a cooling rack with nonstick spray and set it in a half sheet pan lined with parchment.
  • Peel the ginger root and slice into 1/8-inch thick slices using a mandoline. Place into a 4-quart saucepan with the water and set over medium-high heat. Cover and cook for 35 minutes or until the ginger is tender.
  • Transfer the ginger to a colander to drain, reserving 1/4 cup of the cooking liquid. Weigh the ginger and measure out an equal amount of sugar. Return the ginger and 1/4 cup water to the pan and add the sugar. Set over medium-high heat and bring to a boil, stirring frequently. Reduce the heat to medium and cook, stirring frequently, until the sugar syrup looks dry, has almost evaporated and begins to recrystallize, approximately 20 minutes. Transfer the ginger immediately to the cooling rack and spread to separate the individual pieces. Once completely cool, store in an airtight container for up to 2 weeks. Save the sugar that drops beneath the cooling rack and use to top ginger snaps, sprinkled over ice cream or to sweeten coffee.

I cut a sprig off and diced it up. Put it in my Assam Tea (which is my favorite) and it made a distinct difference.
It was Great. Adding raw ginger to a pot of tea has my recommendation.

The quarter pound I planted is sprouting nicely. Obviously it is all indoors at this point, since it is bone freakin' cold outside. But still, it is all ready for springtime when it finally arrives. That 2lbs is going to turn into a lifelong supply.

Ginger is good stuff.  It is an antioxidant that helps to boost the immune system and fight off infections and has anti-viral properties. It is my go to tea when I start to feel like I'm coming down with a cold.  I buy 'Traditional Medicinals Organic' ginger tea bags (1500 mg. of organic ginger rhizome) and Peppermint tea bags. Both have antibacterial properties. Zaps a cold in no time.
