An Irishman moves into a tiny hamlet in County Cork, walks into the pub and promptly orders three pints. The bartender raises his eyebrows, but serves the man three pints, which he drinks quietly at a table, alone.

An hour later, the man has finished the three pints and orders three more. This happens yet again. The next evening the man again orders and drinks three beers at a time, several times. Soon the entire town is whispering about the Man Who Orders Three Pints.

Finally, a week later, the bartender broaches the subject on behalf of the town. "I don't mean to pry, but folks around here are wondering why you always order three pints?"

"Tis odd, isn't it?" the man replies. "You see, I have two brothers, and one went to America, and the other to Australia. We promised each other that we would always order an extra two pints whenever we drank as a way of keeping up the family bond."

The bartender and the whole town were pleased with this answer, and soon the Man Who Orders Three Pints became a local celebrity and source of pride to the hamlet, even to the extent that out-of-towners would come to watch him drink.

Then, on St. Patrick's day, the man comes in and orders only two pints. The bartender pours them with a heavy heart. This continues for the rest of the evening. He orders only two pints. The word flies around town. Prayers are offered for the soul of one of the brothers.

The bartender says to the man, "Folks around here, me first of all, want to offer condolences to you for the death of your brother. You know-the two pints and all.

The man ponders this for a moment, then replies, "You'll be happy to hear that my two brothers are alive and well. It's just that I, me, myself, have decided to give up drinking for Lent."

I never needed Ancestry.com to know I qualify.  The surprise in the Cyber household was when Mrs. Liberty sent her DNA test to Ancestry.com, she was surprised to learn she also qualifies.  She had always thought she was Scandinavian.

Why a surprise? The Danes (generic name, not the actual nation) ruled Ireland for 300 years, nigh on. Lot of cross breeding in that time.

Yes, the map they sent showed a very large area, so I told her obviously the Danes kicked some Irish butt centuries ago.  It seems if somebody isn't kicking the Irish butt, we're busy kicking it ourselves.

The one and only day of the year I slave in the kitchen making my delicious Guinness Irish Beef Stew. About an hour of prep time, and another 3 hours getting happy in the oven, while I drink any unused ingredients. In the end the richest tasting stew you have ever had.

I have Irish and Scot-Irish in my background..

Scot-Irish, English, German, & Swede here.  On my Scot-Irish side we are direct decedents of Robert the Bruce King of Scotland.  Great records were kept of that line thankfully. Even have pictures of the castle my ancestors had prior to the family ending up in Ulster (Northern Ireland), and a Golf Course still under the family name. My GGGG Grandfather came to America from Ireland prior to 1750 and was a wagoneer under George Washington during the French Indian War surviving the Braddock’s Defeat battle with Washington. He served in the Revolution too, fighting at Kings Mountain SC.  He lived to be 102, and his tombstone still stands today.

How good is the DNA test???


I had mine bought and paid for by family researchers in the Southeast (a group of old gals) who were excited to find a male decedent of the line they were studying. Males provide the best proved DNA tracking. They were trying to find out if my family line was linked in any way with another family line of the same last name they were part of. It did not.     But as far as the DNA test, it was a bit difficult to understand fully. Its a science in itself.  Not simple laymen's terms like the commercials you see. You've seen them - "Oh wow! this shows I can trade my Liderhosein for a Kilt.".  Finding out what ethnic groups you are part of is the simple part. Its a lot more complicated than that when determining if your DNA markers match others.

Irish Beef Stew With Guinness Stout

Ingredients
4 tsp    olive oil or butter
6 b      Bay leaves
4lbs      Beef stew meat
2      large yellow onions
4      garlic cloves  peeled and chopped
2 tsp   dried thyme
2 Tablespoons    dried rosemary
4 Tablespoons dark Roux   (see recipe below)
2  - 10oz   Cans Beef Broth
2 – 6oz   cans Tomato Paste
1 – cup Guinness stout   (don’t worry you can add more later as it cooks down)
3 Tablespoons   Brown Sugar
1 lb     Baby carrots
2 lb     New Potatoes     (I cut in half)

Directions:
I an oven proof stockpot brown stew meat in olive oil or butter. Sear the meat well browning on all sides.  Season with salt and pepper and maybe a pinch of cayenne (optional) as it cooks.
Remove meet from stockpot and set aside.
Add to stockpot the onions, and cook until they become clear. Reduce heat to low and deglaze the pot with the Guinness scraping the sides. Add the garlic, thyme, rosemary, and roux and stir until smooth.
Add beef broth, bay leaves, tomato paste, and brown sugar. Simmer stirring until the stew thickens a bit. Add the meat back, the potatoes and carrots. At this time add more beef broth, Guinness, or roux  as needed to get the thickness and flavor the way you like it.   More salt and pepper to taste.
Place the pot in the oven at 300 F for 2 to 3 hours, stirring  a couple of times.
8-12 servings

Dark Roux
1/2 cup salad oil
1 cup flour

In a saucepan heat  oil over medium heat until smoking. Whisk in flour, a little at a time. Whisk constantly until roux becomes smooth and thick and continue to cook until roux becomes a rich brown nutty color

Add beef broth, bay leaves, tomato paste, and brown sugar. Simmer stirring until the stew thickens a bit. Add the meat back, the potatoes and carrots. At this time add more beef broth, Guinness, or roux  as needed to get the thickness and flavor the way you like it.   More salt and pepper to taste.
Place the pot in the oven at 300 F for 2 to 3 hours, stirring  a couple of times.
8-12 servings

Dark Roux
1/2 cup salad oil
1 cup flour

In a saucepan heat  oil over medium heat until smoking. Whisk in flour, a little at a time. Whisk constantly until roux becomes smooth and thick and continue to cook until roux becomes a rich brown nutty color
That does sound good. With any Irish luck the missus has the corned beef brisket in the crock pot. If not I'm throwing in on the BBQ tomorrow.

For the record, I have a great-grandfather (long deceased before I was born) who came over here from Ireland. I typically don't play up my Irish side all that much but it's there.

After first eating my Irish Beef Stew with Guinness Stout, I call Corned Beef & Cabbage peasant food.

By the way, it just went into the oven for 3 hours. The recipe used about 2 bottles of Guinness. What to do with the other 10 bottles?   Hmmmmmm

I did listen to it Friday, and yes, having 3 Irish grandparents, I did celebrate.
The other grandparent was Norwegian, and we still haven't figured out how that came to pass.
