This is a really good chewy oatmeal cookie recipe, to which you may add anything you like - raisins, dried cranberries, nuts, chocolate chips, coconut, etc. I found it on a box of Sturm brand quick oats.


3/4 c. vegetable shortening
1 c. brown sugar, firmly packed
1/2 c. granulated sugar
1 egg
1/4 c. water
1 tsp. vanilla extract

3 c. oats, uncooked (I use quick oats)
1 c. all-purpose flour
1 tsp. salt
1/2 tsp. baking soda

Preheat oven to 350 degrees. Combine last four dry ingredients and set aside. Beat together shortening, sugars, egg, water and vanilla until creamy.

Add dry ingredients to creamed ingredients and mix well. Stir in raisins or whatever you might be adding.

Drop by rounded teaspoons onto greased baking sheet. Bake at 350 for 12-15 minutes. Cool on wire racks.
