Oh yeah, I meant to tell you I found a little private owned slaughter service not too far from me and am getting half a small grass-fed heffer for $3/lb. That's like half the price of just ground chuck from the regular grocery store I go to.
I'm also trying to get a box of fat from them that I can render, but they have some guy there named "Poncho" that works for them, that takes most of it and renders it and sells it to some of the authentic Mex restaurants in the area.
