 Cauliflower "rice" is so popular at Trader Joe's that select locations have placed a limit on how many you can buy. The low-carb alternative to traditional rice is being rationed — customers can purchase two cauliflower rice bags a day — at two locations in the Northeast: South Orange, NJ, and Fairfield, CT. While the former establishment told Well + Good a cap is in effect, the latter said they are not "actively enforcing" the ration.

Trader Joe's retails a 15-ounce bag of riced cauliflower for $2.49 and they sell riced broccoli — no news of of a ration here — as well. The affordable grocer previously revealed that they use leftover stems to create riced vegetables.

B&G Foods has a business model that makes it worth my investment.  They bought Green Giant and had a marketting push to revive the brand.  One of the new offerings Green Giant rolled out ahead of the trend was this "Riced Cauliflower" stuff.

It's in every grocery store now.

I've had mashed cauliflower as a substitute for mashed potatoes.   It was pretty good.  Texture is a little different but with enough butter you wont notice.  :)

You can find riced cauliflower at Sam's Club and also at Kroger (brand names and store brand, also).

I think the Kroger brand is about a dollar.  If anyone tries it,  I would love to hear a review of how it turns out.  I tried making caulitaters once, and they were watery even though I drained the heck out of them.i

Ok, fair point.  You could still make it at home with a hand grater, but it would take quite a bit longer.

I made some cauli-rice just last night with some chicken fricassee over it, and it was great.  Of course, I like cauliflower in general, so if you're not a fan your mileage may vary.

I made some cauli-rice just last night with some chicken fricassee over it, and it was great.  Of course, I like cauliflower in general, so if you're not a fan your mileage may vary.

I do like it, cooked or raw.  Your dinner sounds good.  Maybe I should lay it between clean dish towels to get all of the moisture out.

Knorr brand Broccoli and Cheddar Rice with a bag of frozen cauliflower. At the end of the rice instructions, throw in a 1/2 cup of hot milk and a handful of cheddar. Meanwhile, nuke the cauliflower to get it hot, and toss it in.

Sweet.
