Why is it that conservatives -- who will often be the first to point out (accurately) that genes and inheritance can affect human characteristics from IQ to personality to eye color -- will become defensive when it's suggested that those same factors may affect one's sexuality, as well?

Because they need others to look down on, and they need the obsessions about moral shortcomings, according to their own beliefs and standards. Gives the preachers material for their moral scolding and sermons.

I question their "conservatism" by certain standards, for they lose sight of personal freedom as a goal.

I say if God didn't want there to be homosexuals, he would not have made them; because God doesn't make mistakes.

I submit that it is completely impossible for anyone to survive on this planet without making judgements about literally hundreds of things every day! We MUST discriminate in order to survive!

Exactly. Which is why the left clings to Matthew 7:1-3, "Judge not, lest ye be judged" completely misreading the full text.

Judging is what the brain does. It is the default setting for survival.
