I always wanted to buy and old countryside church and convert it into a single family residence.

Had a friend that did this and it was really incredible....leaving the exterior as it was so that it didn't draw attention to any zoning enforcement etc., he transformed the interior into a New York City-style loft condominium.  He even utilized the bell tower for a telescope.
