According to Boston’s WBUR, roughly 1.4 billion pounds of cheese is currently in cold storage across the country. That’s the largest surplus the nation has ever had since officials began keeping records a century ago.

According to Cornell Agricultural Economics professor Andrew Novakovic, there are a number of reasons for the surplus.

Dairy farms are producing a lot of milk, tand the domestic use of that milk is changing.

After 35 years, my brother claims the price of cheese was the final straw in deciding to close his pizza/sub take-outs in Western New York State.   :shrug:

I wonder what percentage of this is 'American Cheese Product' and not real cheese and is impacted by people wanting the real thing- with imported and artisanal brands becoming more popular. Not even 10 years ago, you probably had 3-4 cheese choices in our local grocery stores, now they have entire cheese delis with dozens of cheeses from all over the world. Old Velveeta just isn't as appealing as an aged English Stilton or Mexican Oaxaca. Even restaurants have scaled back from using Velveeta and are using more real cheese now.
