This isn't a matter of siding with sharia, it's a matter of enforcing the anti-discrimination laws already on the books.  A hasidic jew in NYC won a similar case in 2013.  He had been fired because, the NYPD claimed, his beard - which he also cannot trim for religious reasons - violated the NYPD's one-millimeter regulation on facial hair.  That wasn't a matter of siding with hasidic law in the NYPD, it was a matter of the anti-discrimination laws and the Constitution.

The interesting point in that opinion was that the judge noted that the NYPD might have a basis for its regulation - namely that facial hair would interfere with wearing a gas-mask - but still ruled against the NYPD because the one-millimeter thing sounded more like an afterthought excuse for the firing rather than a bona fide regulation.  It's interesting because it implies that the NYPD might have gotten away with it if they had really created it as a bona fide regulation.

It's also interesting as far as this case is concerned because it underscores the fact that a government agency might get away with the discrimination if it could show an undue hardship to carrying out the agency's mission would result in the absence of the discrimination.  It's interesting in that light because applying that rule to this case means that the school cop is very likely to win this case.
